Gordon, breadfruit or ulo fruit is best not too ripe. Semi ripe is best, I usually slice it thinly and fry it like chips and once done, sprinkle sugar on it.

We in Sri Lanka the Muslims cook the bread fruit with beef and beef tail as a curry . And the other way with coconut milk . Gosh I miss bread fruit.
This fruits we throw baway the outer skin then cut the fruits thin slice and fried with oil..then sprinkle lil salt…just like fries..That it…Borneo style..
